Last night was such a festive, fun evening enjoyed with some of our closest friends here in Utah. It was a B.Y.O.P. (bring your own pumpkin) affair that included eating lots of yummy pumpkin desserts and carving pumpkins galore!
I made some two ingredient pumpkin spice cookies that I found from Julie and Tina, and they were bomb diggity (yes, I just said “bomb diggity”). If you’ve never heard of these babies before, all you need is two ingredients (hence their name): a can of pumpkin and a box of spice cake mix.
Dump it all into one bowl, and stir, stir, stir! You can be creative with these and add in all sorts of stuff – nuts, raisins, chocolate chips, butterscotch chips, white chocolate chips. I decided to add semi sweet chocolate chips to mine! Plop them onto a greased cookie sheet, and stick ’em in the oven for about 10-12 minutes at 350 degrees.
Viola! Simple as that. Easy prep, easy clean up, delicious results – you can’t go wrong!
Of course I provided a big ol’ bowl of candy corn and pumpkins!

Our friends brought some amazing treats to share too! There were pumpkin squares with cream cheese frosting, pumpkin cheesecake, and some sort of apple dessert (I didn’t try any because all of the pumpkin desserts had me sold!). The dessert spread was heavenly!
After everyone enjoyed some dessert, we got straight to the pumpkin carving! I haven’t carved a pumpkin in several years, so it was a lot of fun to do it again. And apparently my husband is a pumpkin carving master, which I had NO idea about!
These are Cody’s and my finished products! Cody’s is on the left and mine is on the right. And yes, Cody’s pumpkin is supposed to look like it’s throwing up – lovely right? I suppose that’s a boy for you… 😉
Needless to say, it was a festive evening filled with lots of fun and yummy fall eats!
